I noticed the PS was missing from the list of platforms that can work cross platform. I wonder if they are excluded or MS just doesn't want to mention the name of Sony on their stage.

MS announced new controllers that you can design yourself. You pick the color scheme and build it how you want it.
They showed a sizzle real of ID game. Cuphead and Below look interesting to me.
CD showed Gwent. I didn't understand the game inside The Witcher and avoided it whenever possible. Now CD is making it a stand alone game. I'm not interested but maybe if I put more effort into it, it might be fun.

They showed a hilarious trailer for Dead Rising 4. Never played one of these games but it looked pretty funny.
Creepy "We Happy Few" trailer.
I hate Scalebound. The main character wears headphones and fights with a sword while spewing teenage taunts. Meh.
The trailer for Sea of Thieves maintained my interest. It still looks very interesting.

On stage, Xbox head Phil Spencer announced that all Xbox One peripherals would be supported by Project Scopio and that all Xbox One games will be playable on the original Xbox One, the Xbox One S, and Project Scorpio with the goal being that "no one gets left behind."

I haven't watched the Ubi conference nor Bethesda, but I did manage to watch EA's, MS's, and Sony's. Personally, Sony is the one that got me the most excited. There were some fantastic looking games they showed, and a TON of focus on their upcoming VR headset, which I have on pre order.
I agree, MS is making a much better statement this go around. The slimmer XBOX is nice and the price is right, but I'm not a fan of them introducing the more powerful one for next year, just as I'm not a fan of Sony doing this as well. It's all well and good to say everything will be compatible and will work together, until we start seeing games with huge performance gaps between the 2 machines or some developer saying that a game is only coming out on the more powerful machine because the other ones can't handle it. I think one of the best precedents Sony (and later MS) started was showing how their game systems are built to last 10 years. As a gamer with limited funds, I appreciated knowing that shelling out money on a Playstation meant I would be enjoying great games for years to come. But now they're doing a refresh 3 years in and it's not simply a machine to scale output to 4k, but will offer other performance boosts. This is something I don't like as I feel it ends up segmenting the market. Maybe my older machine won't be supported as long as I thought it would. I may be in the minority on it and I may be completely off base in my thinking, but I just think it sets a bad precedent to do a mid console refresh like this as it just conditions people to want to wait for the refreshed console rather than jumping in now. Heck, that's why I liked console gaming because the specs are static for generally 5 years or so. If they're doing refreshes every 2 or 3 years, I might as well buy a PC and do that myself.
I personally think Nintendo is screwed though with the NX. With MS launching their beast next year and Sony also, NX better truly stand out from the pack with some marquee games or it will get passed over as people wait for the new systems, similar to Wii U.
